Broad bean salad

1 tin of broad beans, deskinned and warmed through in garlic oil

1/2 tin of sweetcorn added to the beans and add pinch of chili

1/2 a courgette roasted with salt

Leave the above to cool to room temperature

While this is happening, roast a sweet potato cut into wedges and seasoned with Old Bay seasoning

Slice the skin of one preserved lemon

Add salad leaves & lemon slices to the beans and mix in feta

Once the potatoes are cooked, assemble the dish, with a few spoonfuls of full fat greek yoghurt and top with a fried egg
