Pear and almond sponge pudding

IMG_0864Cream 75g unsalted butter with 125g caster sugar, add one egg and a teaspoon of almond essence (less of extract if that exists!). Add 125g plain flour & 2 teaspoons of baking powder, add 200ml full fat milk. Pour over tinned pears in a greased cake tin. Bake at gas mark 5 until it bubbles over the top of the cake tin and smells good!

Serve with cream.
